Egg Curry Recipe – with Potato

Today’s recipe is another regular one which is prepared in every household. Nothing fancy about Egg Curry but many people requested the recipe. So here it is.

The one I am sharing with you today is very simple and easy and can be prepared when you have a very little short time at hand.

So, with this easy Egg Curry, even bachelors and those who live in hostels can enjoy a tasty meal without having to require too many ingredients in their kitchen.

Ingredients Quantity
Egg 5
Potato 3
Onion 2
Ginger-garlic paste 2 teaspoon
Cumin seeds 1 teaspoon
Cardamom green 1
Cardamom brown 1
Cloves 4
Black pepper 1/2 teaspoon
Mace 1 clove or 1/4 teaspoon powder
Red chilli powder 1 teaspoon
Turmeric powder 1/4 teaspoon
Salt to taste
Coriander powder 1/2 teaspoon
Fenugreek seeds 1/2 teaspoon
Cinnamon stick 1
Bay leaf 2
Mustard oil 1/4 cup
Coriander leaves for garnish
Water 1 glass

Method:

1. I’ve boiled the Eggs in advance. Peel of the skin of potatoes and cut each of them into 4 pieces. In a grinder, combine onion, cumin seeds, cloves, cardamom green, cardamom brown, mace and black pepper. Grind it to make a fine paste.  You can add a small amount of water while grinder to make a fine paste.

2. Heat the pressure cooker with oil, and temper with fenugreek seeds.

3. Add the ground paste to the pressure cooker. Add salt, bay leaf, cinnamon stick, ginger-garlic paste, red chilli, turmeric and coriander powder.

4. Cook the spices on medium flame for 7-8 minutes,  till the oil shows separately. Heat another pan with oil and fry potatoes on high flame for 2-3 minutes.

5. Add fried potato into the pressure cooker along with a glass of water. Pressure cook it on high flame for one whistle, then slow the heat and cook for another 2-3 minutes. Switch off the flame and let it cool. Open cooker after 15 minutes to get oil on the top of the curry. Curry will look good in color.

6.  Peel off the skin of Eggs. Fry the Eggs for half minutes in the same pan  you fried potato. Add fried eggs into the cooker and garnish with coriander leaves. Serve hot with rice and chapatti.
