Nutrela Dum Biryani Recipe

Non-Vegetarian people always tell me, a veg Biryani can never beat the taste of Mutton or Chicken Biryani. Challenge Accepted.

Being a vegetarian, I know how to make my biryani taste good. And this Nutrela Dum Biryani is exactly that. Its spicy, its juicy, its delicious, and the Nutrela pieces make it look as if there are pieces of chicken in it, which makes Nutrela Dum Biryani equally good for non-vegetarians as well.

Ingredients for Nutrela:

Nutrela 2 cup
Onion 4
Vegetable oil 1/4 cup
Cumin seeds 1 teaspoon
Cardamom brown 2
Cardamom green 3
Black pepper 1/2 teaspoon
Cloves 4
Nutmeg powder 1/8 teaspoon
Mace powder 1/8 teaspoon
Cinnamon stick 1/2 inch piece
Bay leaf 2
Red chilly powder 1 teaspoon
Turmeric powder 1/2 teaspoon
Salt to taste
Coriander powder 1 teaspoon

Ingredients for Rice:

Ingredients Quantity
Basmati Rice 4 cup
Cumin seeds 1 teaspoon
Cardamom green 4
Cardamom brown 2
Bay leaf 2
Cinnamon stick 1 inch piece
Cloves 4
Black pepper 1/2 teaspoon
Salt to taste
Food color a pinch
Fried onions 1/2 cup
Mint leaves 1/4 cup
Green chilly 5
Kewra water 1/8 cup
Milk 2 tablespoon
Vegetable oil 2 tablespoon

Method:

1. Soak Nutrela in water for half an hour, drain the water. Take soaked nutrela into the pressure cooker and add all the spices given in the table “ Ingredients for nutrela “.

2. Mix it well, and pressure cook it for one whistle on high flame, then cook for another 7-8 minutes on low flame.

3. Switch off the flame, and let the pressure settles down. Open cooker, if you see some water left in the cooker, cook on high flame to evaporates the water. Keep it aside for dum. Take another aluminum wok with 1-1/2 liter water and add cumin seeds, cardamom brown & green, cloves, black pepper, bay leaf, cinnamon stick and salt. Now boil the water.

4. Add soaked rice in the boiled water and cook on high flame till the rice properly cooked and drain the water (take out one rice and if you can mash it between your fingers, it is ready).

5. Take another non stick wok and add half of the cooked rice.

6. Then put cooked nutrela, fried onion, green chilly, mint leaves and add leftover rice on the top of nutrela. (Layering as we mentioned earlier)

7. Take milk and kewra water into a bowl and add food color. Sprinkle kewra-milk water on the biryani and garnish with mint leaves and leftover fried onions. Cook covered on low to medium heat for 8-10 minutes.  Delicious Nutrela dum biryani is ready, serve hot with yogurt, salad and your favorite beverages.
