So, Why I named it Paneer Nazakat? Well, I wanted you to get a feel of the deliciousness of this recipe just by it’s name. I don’t actually remember where I heard the name, maybe on some TV show or maybe in a Restaurant. I don’t usually name the recipes like that but this one is so apt to be called Paneer Nazaakat.

Ingredients for Paneer cube filling:

Ingredients Quantity
Paneer / Indian cottage cheese 400 gram
Green chilli 1
Green cardamom powder 1/4 tsp
Red chilli powder 1/4 tsp
Salt to taste
Cashew nuts ( chopped finely ) 1 tsp
Turmeric powder 1/4 tsp

Ingredients for Gravy :

Green chilli 2
Cloves 3
Green cardamom 2
Black cardamom 1
Bay leaf 2
Cinnamon stick 1
Tomato puree 2 cup
ginger-garlic paste 2 teaspoon
Brown onion paste 1 cup
Cashew nuts paste 1/2 cup
Yogurt 1/2 cup
Cream 1/2 cup
Salt to taste
Red chilli powder 1 teaspoon
Turmeric powder 1/4 teaspoon
Garam masala powder 1/2 teaspoon
Vegetable oil 1/4 cup
Green cardamom powder 1/4 teaspoon

Method:

Note: How to make brown onion paste?

Heat the pan with oil and fry onion till light  golden brown in color. Remove it from oil and cool it at room temperature. Grind it along with some water to make fine paste.

1. Cut the paneer into 1- 1/2-inch cubes. Scoop out a small amount of paneer from the middle of each cubes as shown below in the image. ( Now we have to make stuffing/filling for this scooped paneer cubes) Put the scooped paneer on a plate and ready all the spices to mix with it.

2. Heat the pan with a teaspoon oil and saute with chopped cashew nuts and green chilli. Fry it till cashew nuts are light golden in color. Switch off the flame and add fried cashew nuts & chilli to scooped paneer. Add red chilli powder, salt, green cardamom powder and turmeric powder. Mix it well. Now filling is ready. Stuff the mixture in the scooped paneer cubes as shown below in the image.

3. Heat the pan with a teaspoon oil and put stuffed paneer on it. Fry it on the back side of paneer for 1 minutes on low flame. Switch off the flame and keep it aside.

4. Now we prepare gravy !! Heat the wok with 1/4 cup oil and saute with green chilli, cloves, cardamom green, cardamom brown, bay leaf and cinnamon stick. Add in tomato puree, ginger-garlic paste and cook it on medium flame for 2-3 minutes.

5. Add red chilli, turmeric, coriander and garam masala powder. Cook the spices for another 2 minutes. Now add in brown onion paste, yogurt and cashew nuts paste. Cook the spices on low flame for 5 minutes till oil shows separately.

6. Add 1/2 cup water and let it boil. Switch off the flame and add cream and green cardamom powder. Now gravy is ready. Pour the gravy into a serving bowl and put fried paneer cubes on the top of the gravy.  Put fried cashew nuts on the centre of each paneer cubes and sprinkle little red chilli and green cardamom powder on paneer cubes. Nazakat paneer is ready to serve, Serve hot with butter Naan.

Instructions
