Rasawal is a traditional sweet dish that is prepared with sugarcane juice and new rice. It is one of the most famous dish from my village. It is a seasonal dish that usually make during winter. I learned this dish from my grand mother who makes delicious rasawal.

Preparation Time: 5 Minutes

Cooking Time: 60 Minutes

Ingredients Quantity
New rice 1 cup
Sugarcane juice / Ganne ka ras 3 litre
Coconut 1/2 cup
Ghee 3 teaspoon
Cloves 1
Milk 1/2 litre

Method:

1.Boil the sugarcane juice in a wok and add 1/2 cup milk. Let it boil and you will notice the impurities are floating above. Now you have to take all the impurities off using a spatula. Keep adding 1/2 cup milk and keep removing the impurities every 5 minutes for the next 60 minutes or till you get a golden colour texture of the juice.

2.Till now, you will observe that the juice will be reduced to half after removing all the impurities, now add the soaked rice into it. Cook covered on slow heat for 40- 50 minutes or till you get the thick consistency.

3.Now heat the ghee in a pan and add cloves, add this tempered ingredients and chopped coconut to rasawal. Mix it well and let it cool by itself. Rasawal is ready, serve with milk.
