Soupy Noodles Recipe

Being a Food Blogger, I want to create as many recipes as possible, but as I am a mother of an year old baby, I don’t have that energy to prepare those exotic dinners or lunches, those are the days I try creating quick filer recipes, like this one.

Soupy Noodle is something loved by my husband, and it quite a regular at out place, surprisingly I never posted it’s recipe on my blog, even though I have published more than 300 recipes so far.

So, today is the day for this recipe, the Soupy Noodle, a perfect thing to have in evenings when you feel a little hungry but don’t want to ruin your dinner by having something heavy.

Ingredients for Noodles:

Ingredients Quantity
Noodles ( Boiled) 3 cup
Cabbage (Shredded) 2 Cup
Capsicum 1
Onion 1
Soya sauce 1 teaspoon
Vinegar 2 teaspoon
Pepper powder 1/2 teaspoon
Red chilli flakes 1/4 teaspoon
Chilli-garlic paste 1 teaspoon
Salt to taste

Ingredients for Soup:

Ingredients Quantity
Ginger (grated) 1/2 teaspoon
Garlic (Crushed) 1 teaspoon
Sesame (Till) 1 teaspoon
Capsicum (Chopped) 1/4 cup
Corn flour ( 3 teaspoon dissolved in 1/4 cup water) 3 teaspoon
Pepper powder 1/4 teaspoon
Vinegar 1 teaspoon
Soya sauce 1 teaspoon
Peanut butter 2 teaspoon
Salt to taste
Chilli garlic paste 1 teaspoon
Processed cheese ( Grated) 2 teaspoon

Method:

1. Heat the wok with oil and sauté with onion. Stir fry the onions on high heat for 1 minutes or till onions are translucent.

2. Add chopped capsicum and cabbage and continue to toss well. Stir fry the veggies on high flame till veggies are almost cooked. Don’t over cook the veggies, some crunchiness should be there in vegetables.

3. Add boiled noodles, pepper powder, chilli flakes and salt, toss well.

4. Now add chilli garlic paste, soya sauce, vinegar and continue to toss well on high flame for 1-2 minutes. Switch off the flame and keep it aside.

5. Now prepare the soup.  Heat another wok with oil and sauté with ginger, sesame and garlic and stir fry on medium flame for 15-20 seconds. Add chopped capsicum and stir fry on high heat for 1 minutes.

6. Add peanut butter, soya sauce, chilli garlic paste, vinegar, pepper powder, salt and 2 cup of water. Let it boil for once.

7. Add corn flour mixture with continuous stirring with another hand till you get the soupy consistency you want.

6. Add grated cheese and cook for 30 more seconds. Soup is ready. In a serving bowl, arrange some noodles and pour some soup on the top of it. Enjoy this awesome soupy noodle with your family Smile.
